Lapsang souchong tea

Smoked tea is prepared by drying it in the sun and then fermenting it in baskets next to a fire burning pinewood for 6-8 hours. For brewing, pour 7 oz of boiling water over 1 spoonful of tea and leave to stand for 7-10 minutes.
